Easy To Go Breakfast for Teachers

Hitting Starbucks of Dunkin’ every day for breakfast not only takes A LONG TIME, but also adds up VERY quickly! I’ve been making my favorite easy to go breakfast for about the last six months now, and I’m still not sick of it. I’ve even made a few batches for a student here or there and they love it just as much as I do. I’m talking about my favorite flavor combination: peanut butter and banana overnight oats. It’s nutritious, filling, takes around 3 minutes to put together and the best part: it only costs $0.52 per serving. Yes, you read that right – 52 cents per serving. Oh, and it’s only 250 calories.

Peanut Butter and Banana Overnight Oats

You’ll need to prep 2 servings at a time, or save the other half of the banana in the fridge.

What you need:

  • 1 banana
  • 1 cup of Old Fashioned Oats
  • 2 Tablespoons of PB2 or some other dehydrated peanut butter
  • 1 cup of almond milk (though you can sub other types of milk)

What to do:

Split the banana between two food storage containers and mash with a fork.

Put one tablespoon of PB2 over each banana. (The link goes to Amazon, but it is cheaper to buy in person. I got 2 pounds from BJ’s for $9.99)

I sometimes go heavy on the PB2. I love it! They also make an almond one which is harder to find if you’re not a fan of peanut butter. I haven’t tried it yet.

Put half a cup of Old Fashioned Oats on top.

You can use other oats if you like. Old Fashioned Oats are a little bigger and I think they’re the best, but use what you like.

Put half a cup of Almond Milk in each container.

Use whatever milk you like. I like almond because I feel like I can safely leave it in my lunchbox (and not in the fridge) for longer than dairy milk – plus it’s delicious.

Do not stir. The banana can oxidize. Keeping the banana on the bottom helps with freshness. Put the lids on and keep in the fridge overnight. In the morning – grab and go. Don’t forget a spoon (I always do, so I leave a few spoons in my classroom).

These can be eaten at whatever temperature; you can heat it up in the microwave if you like. Make sure to stir before eating so every bite is delicious! If you find your oatmeal is too dry, you can add a bit more milk. I like to have equal amounts of oats and almond milk because the banana will add some moisture as well.

Aside from this being a super healthy and inexpensive breakfast, I love that I can prep it the night before and literally throw it in my lunchbox without thinking. I’ve tried to prep other foods the night before and very few of them stay delicious. Salads get soggy, sandwiches get soggy – gross. This meal is MADE to sit in your fridge – what could be better!
